The Delicious Caramel


2 1/3 cups (500g) caster sugar
2 cups (500ml) thickened cream
1/2 cup (125ml) corn syrup
60g butter, chopped (4 Tbl.)
1 1/2 teaspoons sea salt flakes

Lightly grease a 20cm square cake pan with butter. Line the base and sides with parchment paper, allowing the sides to overhang. 

Combine the sugar, cream, glucose, butter and salt in a medium saucepan over low heat.

 Cook, stirring, for 5 minutes or until sugar dissolves. Take care of the flying liquids. It scalds.  

Increase heat to high and bring to the boil. Cook, stirring, for 10 minutes or until mixture reaches 118°C (soft ball stage) on a candy thermometer. 

Pour into the prepared pan. Sprinkle with some sea salt> Set aside for 2-3 hours until set and firm. 

Turn onto a clean cutting board. Use a large sharp knife to cut into 3cm squares. Wrap each piece with suitable parchment paper.

Keep the caramel cubes an airtight outside the fridge.
